Caerphilly Cheese

Made my first hard cheese, Caerphilly. Caerphilly is a cheese from Welsh origins, and is a lightly pressed cheese that ripens in about 3 weeks.
Caerphilly cheese is a hard, white cheese and crumbly cheese made from cow's milk, and generally has a fat content of around 48%. It has a mild tasteand a slightly sour tang.

$6 worth of milk gave me about half a kilo of cheese. Pretty cheap for a hand made artisan cheese at $12 bucks a kilo. Most cheese in the supermarket is between $16 and $60 a kilo up.

Maybe a nice cheddar next?

 Looks like cheese

 Cuts like cheese

Not bad. Not real creamy and a tad salty but this is the style.
